Minority Chef Summit 2012 – Making Culinary History
By Virginia Pillsbury
Foodies this is for you.
Some of the country’s best chefs are coming this weekend when the first Minority Chef Summit will take place here in Jacksonville. It is sponsored by Culinary Wonders USA, Black Culinary History and Cuisine Noir, and local Chef Erika Davis has put the event into motion and is beyond excited that the time is here.
The focus of the weekend’s summit is “chefs coming together to make a difference in the culinary culture and the world,” says Chef Erika who was a cheftestant on Bravo’s Top Chef Just Desserts Season One and lives in Jacksonville.
Dishes such as oxtail wontons with sweet soy sauce and jerk pork tenderloin with green tomato chutney will be prepared by the Ladies of Culinary Wonders for the opening meal and will be followed by a round table discussion on such topics as organic, sustainable farming and cooking. Chefs will also discuss whether soul food is a trend or is African American Cuisine. Other weekend events include the chefs prepping, cooking, eating and talking about food and their goals. The weekend culminates in a special wine dinner as these chefs prepare dishes that showcase their style with such items as Creole cured salmon salad, Moroccan spiced pork loin and deconstructed chocolate cake with roasted bananas.
Our Fresh Local Flavor team will be on hand throughout the weekend talking to chefs from as far away as Seattle, New York, Atlanta and Savannah – as well as local chefs. Stay tuned for upcoming Fresh Local Flavor food blogs that will feature these chefs, their passion and philosophies as well as cooking demos.
What better way to commemorate Martin Luther King than by chefs coming together to share their heritage, talent and passion to make culinary history here in Jacksonville.
