Cheesy Sweet Potato Spoon Bread

This hearty yet healthy spoon bread is the ultimate in comfort food. Serve it with a salad and you have a complete meal.

Ingredients:

4 cups of mashed sweet potatoes

1 cup all purpose flour

3 tablespoons soy margarine

½ teaspoon onion powder

½ teaspoon pepper

½ teaspoon cayenne pepper

1 cup boiling water

1 cup egg substitute

¼ cup minced parsley

6 oz Pepper Jack Cheese, shredded

10 oz fat free cream cheese

Salt to taste

Preheat oven to 425. Generously butter six, one-cup ramekins or a two quart soufflé dish or casserole.

Put flour, butter, onion powder, salt, pepper and cayenne in a bowl. Pour the boiling water over flour mixture. Using an electric mixer, beat for 1 minute. On low, add mashed potatoes (make sure they are hot), beat, add eggs and beat until completely mixed. Set aside to cool.

Mix softened cream cheese, shredded cheese and parsley.

Scoop ½ cup of the potato mixture into each ramekin (making a well). Spoon in two heaping tablespoons of the cheese mixture into the potato well. Top with remaining potato mixture.

Bake for 50 minutes. Let cool for 15 min before serving.
