Chile Noodle Salad Forks

We make these simple salad forks for catered events. We like to present it already twirled on forks so that it is easy to eat. It also makes for a beautiful presentation on a tray for cocktail parties.

Ingredients:

1 pound string pasta, cooked until al dente

1½ cup sweet chile sauce

1 cup fresh cilantro

2 tablespoons garlic

1 tablespoon ginger

½ cup soy sauce

¼ cup scallions, chopped

1 red pepper, chopped

This colorful main dish requires a fair amount of chopping, slicing, and dicing, but the cooking takes only minutes. Serve with stir-fried broccoli and cauliflower and brown basmati rice.

Ingredients:

¼ cup (1/3 oz/10 g) coarsely chopped fresh basil

2 tablespoons chopped fresh mint

¾ cup (6 fl oz/180 ml) chicken stock or broth

3 green (spring) onions, including tender green tops, 2 coarsely chopped and 1 thinly sliced

2 cloves garlic

1 tablespoon peeled and chopped fresh ginger

Great ways to start the day

“It’s important to make the daily breakfast effort instead of finding reasons to skip it,” says Catherine Wallace, RD/LDN, pediatric clinical dietitian at Wolfson Children’s Hospital. “It’s not easy to make yourself eat breakfast if you aren’t used to it. Give yourself time and try to eat within an hour of getting up.”

For those who exercise first thing in the morning, eating a regular breakfast may be too much before a workout, but at least have a half piece of whole grain toast. “That gives your body a little energy and then the rest of breakfast can come after the workout,” says Wallace.

Trick or Treat- Healthy Halloween alternatives

Traditional Halloween celebrations, complete with costumes, treats, neighborhood participation and fun, can also be safe and healthy. While alternative fall festival events are certainly a great way to celebrate, there will always be die-hard Halloween, trick-or-treat fans. If you fall in that category, we’ve come up with some simple, safe, and healthy Halloween tips:

Alternatives to candy, candy, candy:

  • Instead of candy, hand out individual serving sizes of cereal, dried fruit, pretzels, nuts, sunflower seeds, candy corn, trail mix, fruit snacks or mini marshmallows. Buy the pre-packed individual servings rather than packaging them yourselves; most children are told not to eat anything that isn’t sealed.

French Toast with Blueberries and Yogurt

Who says breakfast has to be boring? This healthy version of a breakfast classic will tempt the whole family out of bed. Try mixing other berries with the blueberries for a colorful and tasty treat.

Ingredients:

4 slices homemade 10 grain bread (or store bought) cut in half

1 cup egg whites (Egg Beaters/Whites)

1 teaspoon vanilla extract

1 teaspoon cinnamon

1 cup fresh blueberries

½ cup agave nectar (also called agave syrup – it’s a sweetener similar to honey)

Cheesy Sweet Potato Spoon Bread

This hearty yet healthy spoon bread is the ultimate in comfort food. Serve it with a salad and you have a complete meal.

Ingredients:

4 cups of mashed sweet potatoes

1 cup all purpose flour

3 tablespoons soy margarine

½ teaspoon onion powder

½ teaspoon pepper

½ teaspoon cayenne pepper

1 cup boiling water

1 cup egg substitute

¼ cup minced parsley

6 oz Pepper Jack Cheese, shredded
